Ingredients

1½ lb fresh green beans, trimmed
12–16 oz shishito peppers
2–3 tbsp olive oil
2–3 garlic cloves, finely grated
Zest of 1 lime
Juice of 1–2 limes
Kosher salt
Black pepper
Flaky salt to finish
1 tsp hot honey, optional

Methods
1. Toss the beans and shishitos lightly with olive oil and kosher salt.
2. Cook on a very hot flattop in batches so they blister rather than steam. Let them develop dark charred spots before turning.
3. Transfer to a bowl and toss with grated garlic, lime zest, black pepper, and a small drizzle of olive oil.
4. Add lime juice to taste.
5. Finish with flaky salt and optional hot honey.
Equipment
Very hot flattop or griddle; mixing bowl

Notes
Hold warm around 180–200°F if needed.
